Grape varieties Cabernet Franc, Cabernet Sauvignon.
Vineyards Seven hectares on clay/sandy soil planted with 7800 vines per hectare, cultivated with organic methods. Spur pruned cordon training system with the cordon set at a height of 50 cm, so it benefits from the heat released by the soil. Vineyard planted in 2004, at 50 m altitude, in Tuscany, near Bolgheri. Favourable microclimate affected by the sea, which is 6 km away.
Harvest Grapes are harvested early in the morning and processed the same day. Long maceration on the skins and malolactic fermentation completely done.
Aging Traditional ageing in barrique.
Alcoholic strength Presumable 14%, (variability depends on the conditions of the vintage).
Available bottle sizes 0,75 l.
Sensory profile Deep ruby colour with purple hue. Complex and intense nose, with notes of wild berries, fine spices, cinnamon, cloves. The palate is full and elegant with a delicate finish of floreal notes. ‘Ino reveals sweet and varietal tannins. Pairs well with meat and cheeses, like roasted lamb with rosemary, cheese aged in grape skins or blue cheese.
Serving temperature 16 °C - 18 °C in Bordeaux glasses.
