Resulting from an ensemble comprising forest and hunting lodge, this parcel constitutes an emblematic place of the appellation Mercurey. Acquired by our grandfather in the early fifties, it is inseparable from the name "Emile JUILLOT ". Terroir devoted to the cultivation of Pinot Noir, a different geological outcrop, allows to produce here also, in its part Superior, one of the great white wines of the appellation.

ENCEPAGEMENT
Pinot Noir comes from 2 distinct mass selections: one bringing finesse and complexity, the other color and structure.

TERROIR
Oolite limestone soil of Jurassic of "red" color.
From an altitude of the order of 300 m, it faces south-east; This exposure coupled with a steep decline in the Ssouth here allows to benefit from a very strong sun.

AGE OF THE VINE
Plot planted in 1979 and 1980.

CONDUCT OF THE VINE
Here, two types of size are used: the "guyot" size for the finest plants
And the "cordon de Royat" to control the vigorous plants. The soil is cultivated by plowing, and the vine is not the object of any Fertilizer inputs. Control of yields with disbudding and harvest in green if necessary.

METHOD OF VINIFICATION AND LIVESTOCK

. Pre-fermentation cold maceration (3 to 5 days at 12 °)
. 15-day fermentation with pigeage and reassembly. The rhythm and the alternation are

. Maturation 100% barrels including 25% new barrels
. Total breeding time: 11 to 12 months before bottling, preceded by a Simple light filtration if necessary.

A Mercurey 1er Cru of great elegance and finesse.

SERVICE AND MARRIAGE METS / WINES
Can be debouched some time before tasting (2 to 3 hours) Although perfect in the classical associations dedicated to Burgundy, a suspicion Modernity or exoticism will showcase its qualities. Its freshness and tonicity perfectly accompany white meats and some Pisces.
